Alphas are often kind of dominant, and can be written as possessive and aggressive, while omegas are often less dominant, and can be written as submissive and vulnerable. This ranges from really heavy gender essentialism, to really mild gender essentialism, to fics that buck gender essentialism entirely and portray the Omega as being more capable, badass, and in control than the alpha.
There are many different iterations of the Omegaverse. It's an entirely fan-created concept, derived from a SPN kink meme prompt. There's really no "one true Omegaverse" or anything like that. Different writers incorporate different elements into their Omegaverse fics depending on what suits them.
