I'm really fond of all the OCs in the Portal story Blue Sky. All pretty much supporting characters, but very good ones, and used organically. Chell and Wheatley's character arcs couldn't have been done without them.

Pokemon's one of my favorite places to read OCs, one that comes to mind is a retelling of the Black/White plot called "Alphabet Soup." The main trainer is based on Hilda as far as her appearance and role in the plot goes, but she's a completely original character with a new name. All of her Pokemon are developed well, too. One of the best fics I've read based on a Pokemon game plot that wasn't a Nuzlocke.

That sounds similar to an OC stand in. Often a character made out of a minor character or throwaway name.

TBH I sort of prefer to use those myself because (and I know this probably sounds pathetic but) they don't carry quite the stigma of an OC. They're like an OC but you can point to something in canon to justify them.
