I've made this so many times I've got it down to a system: flour tortilla spread with hummus or cream cheese, with sliced red onion, red pepper, crumbled feta cheese and a couple of handfuls of salad greens, rolled up like a burrito. To make it more substantial, I like to add a little sliced deli turkey, and maybe some walnut pieces.
