Easy lunches for work?

[personal profile] caerbannog 2016-03-08 12:11 am (UTC)(link)
Usually I just buy take out if have the ingredients for toasties at work. What are some cheap and fast alternatives that you guys do?

Plot twist I hate cooking so rarely make large dinner meals with left overs. I really hate cooking. And food preparation.

I usually just eat a protein bar. Add an apple or an orange if I'm feeling very hungry.

I'm boring with work lunches. They're just something small to get me through the day.

In the morning, I'll throw some rice in the rice cooker and about halfway through, I'll add in some frozen vegetables. Basically, while I eat my breakfast the rice cooks and while I finish my morning routine, the vegetables cook. It's all in one pot, so it's just one mess to clean up.

idk the price of veggies and such in Australia, but salads are super easy and quick to make and you can change it up a lot. Like making one with pasta or couscous, chicken, salmon, whatever you want really.

I do massive curries so prep once and get four meals out of the deal. Most of the prep can be bought at American groceries these days.

Unless you want to buy all your meals out or frozen, it does involve some level of food preparation. An easy one I've been doing recently is thawing frozen veggies and then mixing them with brown rice, salt and pepper, and some cheese and then heating it all up at lunch.

Ask John Montagu the 4th, he has some good ideas for simple meals that require limited prep and are suitable for eating on the go.

I keep trying to decipher this sentence to no avail. You buy takeout when you have the ingredients for (a sandwich?) at work?

Have you considered using a slow cooker? If you make a potful it's not a lot of prep time, and you get tons of food from it. Prep is mostly "dump everything into pot and then turn on".

Hearty crock pot pasta sauce, portioned into freezer safe jam jars. Then each night I just cook pasta, toss with a little olive oil, and pack up a little shredded parmesan and some broccoli.

*shrug* There aren't really any easy ways to magic up lunch without some food preparation, unless you just take microwave dinners or similarly prepackaged foods. On the other hand, learning how to cook is an extremely useful skill that can save you a great deal of money and be healthier for you.

A crispy-tart apple and some chunks of good, tart cheddar. A crunchy coconut or pecan granola bar and a banana. Premade salads from the grocery that have eggs, meat, cheese in them.

Hard boiled eggs and some crisp bread or crackers.

Drink of choice, perhaps a cookie or something sweet for afters.

Well I don't work, but if I'm out and have a very lean budget, I go for sushi rolls or the supermarket special - get one bread roll from the self-serve section of the bread department, 100 grams of deli meat and a snack tub of salad (coleslaw, potato salad, tabbouleh), and that can come in under $5. Pile the sliced meat and salad on the bread roll and eat.

I've made this so many times I've got it down to a system: flour tortilla spread with hummus or cream cheese, with sliced red onion, red pepper, crumbled feta cheese and a couple of handfuls of salad greens, rolled up like a burrito. To make it more substantial, I like to add a little sliced deli turkey, and maybe some walnut pieces.
