Another case I can think of Bloodborne seeming harder would be if you have poor speed reflexes (which that game emphasizes) but good timing (which the Souls games proper emphasize).
But I've talked about this with a lot of Souls fans, and no, Bloodborne being the easiest regardless of which order you played it in seems to be the general consensus. I myself played them in release order, and for sure, while I learned shit from the previous games that make them increasingly easier, I also went back and played Demon Souls after DS2 and... it's harder. I could see where the skills I'd acquired made it easier for me but I could also see the aspects where it was just plain more technically demanding than DS1 and 2. And definitely Bloodborne.
You're right, though: Bloodborne did take away easy mode ;3
