America's Test Kitchen, Epicurious sometimes, Serious Eats, and then just Google searching for random blogs and finding ones that look trustworthy (IE, doesn't talk about how hubby loves it, not principally a lifestyle blog, able to talk about the basic concept of the dish and the purpose of different steps, often written by someone from the culture in question).

I was thinking about it and I wanted to write some more about what I'm looking for.

The thing is, when I'm looking for recipes, it's not so much the specific details and amounts I'm looking for. What I'm trying to get is a clear understanding of the underlying concept of the dish, and which steps are most central to that, and any important tricks or things like that - and then an understanding of the various methods and variations you can go between and what effect they have on the final dish. And I'm also mostly oriented around how the final dish tastes, not so much authenticity or anything like that. That's really what I'm trying to get at, so I am heavily tilted towards things that provide that kind of explanation - thus Serious Eats and ATK.

Also another source that I use sometimes is Gawker's old Foodspin series: http://foodspin.deadspin.com/the-foodspin-archive-1562788149

It is overwritten - really, pretty shockingly overwritten - but once you get past that it is a pretty good source of basic food recipes that's very focused on taste and very good at explaining the purpose behind the different steps.
