What I'm trying to get is a clear understanding of the underlying concept of the dish, and which steps are most central to that, and any important tricks or things like that - and then an understanding of the various methods and variations you can go between and what effect they have on the final dish. And I'm also mostly oriented around how the final dish tastes, not so much authenticity or anything like that. That's really what I'm trying to get at, so I am heavily tilted towards things that provide that kind of explanation - thus Serious Eats and ATK.
Also another source that I use sometimes is Gawker's old Foodspin series: http://foodspin.deadspin.com/the-foodspin-archive-1562788149
It is overwritten - really, pretty shockingly overwritten - but once you get past that it is a pretty good source of basic food recipes that's very focused on taste and very good at explaining the purpose behind the different steps.

I was hoping there was an English version of the site, but no such luck. It is quite practical, got everything you might need and has loads of options to figure out what you can do including just searching with one ingredient in mind and it suggests meals you can make with it.

It can always give me basics like amounts and cooking times and techniques, and I'll generally just go on from there, or look up the same recipe online to see what other variations people have made, usually at Allrecipes.com
