As mentioned in the weekend plans thread, I made kouign-amann today! Well, mostly yesterday, but the baking part was today. I was super-worried during the process because the butter was breaking through the dough during a few of the turnings (I think I let the dough get too warm), but they ended up coming out with distinct layers and a nice sugary crunch to the outside. Here's the recipe, if anyone else wants to try it! http://www.bonappetit.com/recipe/kouign-amann

AYRT

I was vaguely aware of their existence as 'thing you can buy frozen at one of the specialty stores here sometimes,' but I didn't really know anything about them until they were a technical challenge on the Great British Bake-Off and I went "That right there? That is a thing I should try." They were fiddly and labor-intensive, but definitely worth it for the result.

I should try those someday (I love the ones Trader Joe's has sometimes) but yeast and I do not get along. I've tried basic croissants and they didn't rise much at all. Basic bread usually turns out very dense for me, too, no matter the recipe I follow.
