3 beaten eggs, I cup flour, 1 1/4 cups milk, 1 cup any cheese, grated, 2 tsp baking soda, 1 tsp salt, 2 cloves garlic, chopped or pressed, 2 tbs olive oil, 1-3 small onions, chopped, or 1 onion and whatever other vegetables you like that go well with eggs and cheese; I've used broccoli, red bell peppers, chopped spinach, thawed frozen artichoke hearts, roasted tomatoes, and asparagus.

Mix and dump into 2 greased pie plates and bake at 350 for 30-40 minutes, or put in greased muffin tins and have individual servings, bake for less time, and check often, they should be a bit wobbly in the middle when you take them out, but starting to puff up a bit. They're good warm or room temperature and can be wrapped and frozen for reheating.
