This cake is fabulous. I know you said you wanted something to last a while, but I find it doesn't last in my house past 2-3 days. Mostly because we eat it all.

They are a German holiday cookie and I actually prefer the cookie without the powdered sugar.

For the butter cookie recipe, I use it to make a "thumbprint cookie" with raspberry jelly. Instead of almond extract, I use vanilla extract because it's easy.

Sugar Cookies (from the Better Homes and Garden cookbook)
2/3 C butter, softened
3/4 C sugar
1 tsp baking powder
1 egg
1 Tbsp milk
1 tsp vanilla
2 C flour
optional icing.
Preheat oven to 375 F.
Beat butter and sugar in large mixing bowl.
Add vanilla, egg, and milk. Beat until well mixed.
Add flour and beat in as much as you can, then stir by hand. Stick in fridge about 2 hours.
On lightly floured surface, roll out cookies. Use cookies cutters. Bake 7 to 8 minutes.
TIPS: I'm lazy and usually make the dough one night and bake the next. I can't wait for butter to soften, so I microwave it in increment of 15 seconds. I chop the butter up before I microwave it. This makes the mixing process easier, but also means it takes longer to chill. Feel free to ask questions
I love mint chocolate chip cookies, so I created my own recipe! Using the above sugar cookie recipe, instead of milk, use 2 tsp mint extract and 1 tsp additional vanilla extract. While mixing the liquids together, I add green food coloring, but that's not a requirement.

That's a no bake cake batter truffle recipe. An option if you don't want to use the chocolate coating? Buy peanut butter chips and have the outside be a peanut butter coating.

Banana bread recipe copied verbatim:
1/4 c. oil
1/2 c. sugar
2 eggs
2 mashed bananas
2 c. flour
1/2 tsp baking powder
1 tsp baking soda
3 tbs milk
1/2 tsp vanilla
1/2 c nuts, optional
Mix oil and sugar. Add eggs and beat well. Add mashed bananas and mix thoroughly. Mix together dry ingredients and add banana mixture. Mix in remaining ingredients. Pour into greased and floured loaf pan (9x5). Bake at 350 for 1 to 1.5 hours, or until it passes the toothpick test. Enjoy!!
My notes: you don't bake it NEARLY that long, idek where that number came from. You can use 3 bananas instead of 2 for added moisture. Also I like to use chocolate chips instead of the nuts, or you can leave them out entirely if you want!
The pie is a really simple cherry pie recipe that's home assembled but easy because you use a premade crust (which is still a delicious thing, pie crust is so good). Get about six cups of tart petted preserved cherries - frozen and thawed is great but canned and drained works just fine too; I use three cans. idk where you live though so your can sizes might not be the same? idr the size offhand sorry :( and get a refrigerated Pillsbury pie crust (I'm sure you can use any brand but that's what I use).
anyway, stir this together with 1/3 c tapioca, 1 c sugar and like a teaspoon or so of cinnamon. Open the crust, lay out the bottom and dump the filling in. lay the top crust, crimp and slit it or whatever you like to do to pie crusts, and crack a single egg into a bowl and whisk it up for an egg wash. brush the wash over the whole pie (don't neglect the edges of the crust like I did last time lol) and then sprinkle some sugar on top. bake with one of those...crust cover things? (I am definitely not a professional baker) for about 15 minutes then remove that and bake until done...I want to say the whole thing took an hour or a little less when I did it? I'm gonna text my mom to make sure I have all my numbers right lmao.

(Anonymous) 2016-04-04 11:51 pm (UTC)(link)Put in a baking pan, bake at 375F for about 20 minutes, assuming you're starting with the thighs at room temp. Delicioso! Add any other spices you like, it's pretty hard to mess this up.

1/2 cup all purpose flour
1 small egg or 1/2 a large egg, beaten
1/8 cup white sugar, overflowing
1/8 cup packed brown sugar
1/3(ish) cup margarine or butter
dash of vanilla or almond extract
pinch of salt
chocolate chips, nuts, m&m's, reese's pieces, whatever man
Heat oven to 375F. Cream butter, egg and sugars with salt until very light and fluffy, mix in extract, stir in flour. Add whatever add in you want. Mixture should be very sticky.
Don't be tempted to add leaveners! The air in the mix and the water in the margarine or butter is more than enough.
Spoon onto lined baking sheet. Bake 10-15 minutes or until golden around the edges or desired doneness.
Eat half of the cookies in a rage, then have the willpower to not eat the other half (maybe).

(Anonymous) 2016-04-05 04:06 am (UTC)(link)If you can get caramel chips, since you said you don't care for chocolate, you can add a cup of those too, or any kind of chocolate chips including white if you don't mind white chocolate, or maybe shelled peanuts. Maybe even dried fruit--raisins for the pb&j effect? They keep okay if you wrap them in plastic, but even underbaked they go dry. If you like milk, dairy or not, they go good with it, the unbaked dough freezes well, and scaling them up is easy; most peanut butter here comes in 16oz jars, so I just double everything.

(Anonymous) 2016-04-05 04:55 am (UTC)(link)Mix and dump into 2 greased pie plates and bake at 350 for 30-40 minutes, or put in greased muffin tins and have individual servings, bake for less time, and check often, they should be a bit wobbly in the middle when you take them out, but starting to puff up a bit. They're good warm or room temperature and can be wrapped and frozen for reheating.
Bumble Berry Pie

fruit
sugar
cornstarch slurry (~1tsp constartch, 1 Tbsp water)
vanilla 1tsp/cap-full (because it makes everything better)
Prebake premade pie crust.
Through ~1/4 C sugar in a bowl.
Bumble around your kitchen and find your favorite fruits. For apples/pears and berries, clie slice 'n' dice to your favorite size and throw 'em in the sugar. For citrus, cut but save back for later.
Mix all the fruits with all the sugars and let stand ~20min, or until you no longer see sugar crystals but delicious water-o-fruit.
Add cornstarch slurry and vanilla, mix well.
Bake @375F or 20min. If the water-o-fruit isn't thick and sticky yet, bake another 10min. If still not syrupy, continue baking in 5min intervals.
When done and delicious, remove from oven, add citrus (if you bumbled into some), slice 'n' serve.

Oven: 350 degrees
Either use muffin cup liners or spray the muffin tin
Makes 12 muffins
1 1/2 cups of flour
1/2 cups of oats
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
cinnamon (I don't measure it, I guess a 1 teaspoon)
Mix that all together
Add to the same bowl
1/2 cup brown sugar
1/4 cup maple syrup
1 cup applesauce
3/4 cup frozen blueberries (no need to thaw)
Stir everything together! Like walnuts? Add them in. I've added flax seed too.
Spoon the dough into the muffin tin. Depending on your oven, it can be done anywhere from 18-25 minutes. I tend to cook mine at 22 minutes. Let the muffins cool 5 minutes before taking out of the tin.
Easy peasy!
