Still accepting submissions? Here is my easy recipe for blueberry muffins, no butter or eggs required!

Oven: 350 degrees
Either use muffin cup liners or spray the muffin tin
Makes 12 muffins

1 1/2 cups of flour
1/2 cups of oats
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
cinnamon (I don't measure it, I guess a 1 teaspoon)

Mix that all together

Add to the same bowl
1/2 cup brown sugar
1/4 cup maple syrup
1 cup applesauce
3/4 cup frozen blueberries (no need to thaw)

Stir everything together! Like walnuts? Add them in. I've added flax seed too.

Spoon the dough into the muffin tin. Depending on your oven, it can be done anywhere from 18-25 minutes. I tend to cook mine at 22 minutes. Let the muffins cool 5 minutes before taking out of the tin.

Easy peasy!
