Beyond the general power dynamics that mimi mentioned below (which don't bother me enough to put me off a pairing, generally) I mostly have an issue with Bull himself.

Bull's very open about being a spy. If he stays with the Qun he ultimately is revealed to have been working against both you AND Dorian (if adoribull happens) to further the Qunaris' agenda. This means that not only has he spent the vast majority of the game lying his ass off and manipulating you into liking him, by Trespasser he's also been potentially undermining years of Dorian's work to fix Tevinter and using his relationship with Dorian to ensure that everything Dorian is trying to build will be destroyed under the Qun.

Not to mention Bull's own personal conflicts with the Qun before that point, where he's spying and furthering an religion that he openly acknowledges will kill and enslave every single person he's friends with. And he believes the Qun will be a bad thing for southern Thedas but does this anyway. (this is in contrast to Sten who thinks that the good of the Qun will outweigh the damage it does to individual people.)

So, no matter whether he's Tal Vashoth or not, I find him very untrustworthy and doubt his intentions. Game canon says Bull's a great guy and adoribull works out fine if Bull leaves the Qun. But then game canon also says Isabela doesn't give a shit about Fenris constantly belittling her friends, and that Anders would be happy to see someone sold back into slavery, and a lot of other contradictory things.

None of those things are actually contradictory.

And with Bull in particular, the qunari canonically use drugging and brainwashing to bring people in line with their way of thinking. Bull has canonically turned himself in for said drugging and brainwashing before, because he felt that the negative thoughts he was having were treason against the Qun. That he would break away from that mindset with ample support from his Chargers and his friends is reasonable. That he would, in a situation where his Chargers were sacrificed in a situation that makes it blindingly clear that even his friends consider Hissrad the qunari operative more important than Iron Bull the mercenary, double down on the qunari mindset is also reasonable, because that's how cultish indoctrination works.
