Have you thought of trying crochet instead? I don't get knitting either, but crochet makes perfect sense to me.

I'm clueless at knitting, but I've heard others say crochet is easier. I might give it a try one of these days. What kinds of projects do you do?

Pretty much anything. You can do amigurumi (the kind made from granny squares is my current favorite), potholders, scarves, blankets...really, anything you can knit you can crochet.
