How authentic food is has barely any relation to how good it is, and a lot of truly 'authentic' food is basically inedible and born of a history where food was far harder to come by then it is now.

I'd love to see some examples of this though. what do you deem "authentic"? Like, I really like oatmeal. The traditional kind where you cook or soak oats (whole or crushed) and mix them with cream or milk and a bit of sugar. They're one of my comfort foods though I know that many people hate the slimy texture. they also were the sort of food people used to eat and not much else, because they kept well, could be shared with cattle and were relatively inexpensive. so I'd maybe call that "traditional" or "authentic" but I don't really know if you would include that.

I have heard there is a large divide between authentic Japanese sushi and western sushi. It makes me wonder if I'd hate sushi in Japan.

I like Western Chinese takeaway but as my mother says - having visited Asia in her youth - it has little true resemblance to authentic Asian foods.

That is another thing about ethnic takeaway - usually it has substitute vegetables in it, common western vegetables instead of the Asian vegetables it would have in it's home country.

Just because these factors make Western takeaway "non-authentic" doesn't mean the takeaway doesn't taste fine.
