For the hour-long half-page chats, I just assume the author elided all the inane small talk, discussion of last night's episode of whatever, and general companionable silences that make up the bulk of most conversations when there isn't a crisis or other deadline.

Including it might be more realistic, but it'd also be dead boring to read.
