But I only have a 9x9 pan. Should I try making this with a 9x9 pan instead of buying an 8x8 I may only use once?

You can.
(Anonymous) 2016-07-13 03:15 am (UTC)(link)But you can also change the recipe by multiplying by about 1.25 (if you want the same depth, you just divide the areas 81/64 = 1.265625):
•5 eggs (separate yolks from whites) at room temperature
•1 tsp vanilla extract
•188 g (~1 cup) sugar
•10 Tbsp (1 1/4 stick) butter, melted
•145 g (5 oz) of all purpose flour
•2 cup + 2 Tbsp milk lukewarm
•5 Tbsp fresh lemon juice
•zest from one lemon
•powdered sugar for dusting cake

(Anonymous) 2016-07-13 03:59 am (UTC)(link)No problem! Also, if you have 9 in diameter round cake pan, that can work in place of an 8x8 pan, as the areas are very similar (63.62 sq in vs. 64 sq in).
