11/2 cups flour
1/2 tsp salt
1/4 tsp baking powder
2 tbsp sugar
2oz butter, cold and diced
2oz butter, melted
2oz cream cheese, softened
3-4 tbsp cold milk
Combine dry ingredients. Rub in cold butter. Combine melted butter and softened cream cheese. Add to flour mixture. Add 3 tbsp milk, and mix until the dough comes together - you may not need the 4th tbsp.
Divide dough into two. There's no need to chill it before rolling. Roll one piece between two sheets of parchment paper and put into a pie plate. Prick with a fork and par-bake at 400F for 12 mins or until slightly golden. Fill with whatever fruit (I like to pre-cook my apple a bit to help things along). Roll out second piece of dough and cover pie. Brush with milk and bake at 325F for 45 mins or until golden.
