I suspect people who are quick to point out that somebody "could be bisexual!!!!!!" in cases where it's really not relevant whether the person in question likes one gender or more (see: comments under secret #1) are straight people who are (a) trying to win social justice points and/or (b) mad because somebody made a joke/complained about straight people.

People only say someone "could be bisexual" if someone else has said before that the other person's gay or straight. If, as you say, it's not relevant whether the person likes one gender or more, then nobody should have made any assumptions about their sexuality, including the assumption that they're gay or straight. So if they do anyway, following it up to point out that they could be bisexual is fair game.

it's okay to make assumptions about people's sexuality based on their expressed preferences

obsessively reminding everyone that they might have other preferences that we don't know about is a lot more intrusive
