I have no problem with people writing fluffy fic about a toxic ship, but I don't understand it. If you are writing a fluffy story about these characters and their relationship, then it isn't these characters. It is an original fic that just happens to have characters with the same name as characters from the show.

You can kind of apply that to anything though? I've seen the "It might as well be original fic" said about pretty much every fic trope, from non-canon pairings to wildly AU stuff. Fic's pretty personal on what details are going to make or break it for you.

I read fic because I love the characters and/or the world and want more of them/it. I love to see the characters in different situations from the show and see how they would react. Sometimes that's a romance. Sometimes it's a fix-it fic. Sometimes it's an AU where the characters face a different situation than they are currently in. I also love to see different explorations of the world they are in. If neither the world nor the characters are the same, how is it related to the Canon at all? In this instance, how is a happy high school teacher named Walt meeting a younger man named Jesse in a coffee shop at all a Breaking Bad fanfic?
