Rick's surname is Sanchez but Morty's surname is Smith. I figure white-hispanic if anything.

Rick (the scientist main character) has the last name Sanchez.

On the other hand, his ethnicity is extremely hard to track because he's an insane interdimensional scientific genius. And he - as well as his daughter and the rest of the family - are voiced by white actors, and... I mean, maybe this is unfair, but they come across as the most whitebread characters imaginable.

So, draw your own conclusions, but I don't think you would be wrong if you identified them as white.

There's a theory Sanchez is just a cover for his real last name.
