(Anonymous) 2016-10-18 12:59 am (UTC)(link)Well... to be fair, I don't know if I ruined it necessarily, but it'll be well past dinner by the time it's finished because apparently I fail at reading comprehension. /sigh
Making gumbo. A recipe from Emeril on the Food Network site.
First, the recipe said that darkening my roux should take 20-25 minutes of constant, slow stirring over medium heat. Tried it for 20, 25, 30... finally at 45 minutes it's not quite as 'mahogany' as it should be but, screw it! (I read up on browning a roux... apparently the recipe was way off and 45 min+ is the norm. D'oh)
Then I didn't realize that it needs to simmer for an hour before I put the browned chicken thighs back into the pot and let it simmer another 1 & 1/2 hours.
So, looks like I'm having sandwiches tonight. Hopefully the damn gumbo turns out decents after all this!
On the plus side, I don't have to plan dinner tomorrow.
