IT'S SUCH A DELICIOUS SALAD. It's delicate, sweet, savoury... I find it satisfying every time.

Maybe I just like it so much because it gives me an excuse to buy champagne lol.

Orange juice (or concentrate if that's all you've got), champagne, olive oil, little bit of mustard (as an emulsifier), honey, salt and pepper, to taste. I tend to go really easy on the oil as this is not a raw dressing, and I find it can overpower the other flavours if too much is used. A tablespoon or so to around a 1/2 cup of the other ingredients will do just fine.

Bring just to the boil in a saucepan on the stovetop until it starts to thicken up, remove and taste and adjust for consistency/sweetness/salt/etc. The nice thing about this is you can make a pretty big batch and bottle it if you're so inclined. I like my dressing on the sweeter side, but if you feel you need more acidity then you can also add some lemon juice in the end stages to brighten it up.

You can also add a few drops of truffle oil at this stage if you're feeling particularly sexy.
