In a way I get why people ship Buffy/Giles. They share a mission, they're borderline fated for each other (in a watcher/slayer capacity), plus there's the whole messed up, tragic angle where his job is basically to encourage her to submit to a job that will kill her while simultaneously training her to survive.

That all makes for a super interesting dynamic, and if the show were a very, very different version of itself, I could definitely see shipping it.

But with the show as it stands, yeah, Buffy/Giles is a NOTP for me too.
