I have heard that it's mainly psychological. The stores put the 'fanciest' stuff right as you come in. Produce, wine, fancy cheeses, flowers, that sort of thing. That way it colors your impression of the rest of the food there, so even if it's the same can of green beans you could buy anywhere you feel better about buying it and feel like it's higher quality because you've been primed by the initial display of freshness.
