But he didn't refuse hospitality - he let Belle's father in, fed him, etc. It was only when he stole the rose that shit went down.

Nope. He discovers Belle's dad in the study where his servants try to tell him they let the man in so as not to have him freeze to death in the cold. Beastyboy drags Maurice into a cell.

The rose-petal freak out is when Belle goes into the forbidden wing and sees the rose under its Bell jar cover, and when she tries to repair a portrait of...someone (the timeline is all screwed up, the reaction implies it is the Beast as a human but that doesn't fit with the prologue). That is when the Beast hulks out.

Ah, thanks. Guess I'm mixing up the Disney with other versions - Disney has never been my favorite rendition of the story.

I can forgive the Stockholm Syndrome in it, but not the screwing up of the timeline. The latter just really bugs me.
