I like Carol of the Bells, I think the one of the Home Alone soundtrack is nice.

O Holy Night is also a favorite. I like the N'Sync a cappella version.

As someone above mentioned, Love Actually version of All I Want for Christmas Is You is really good.

I don't have a favorite versions of either Silent Night or I'll Be Home for Christmas, I like a lot of them.

And I like acoustic guitar instrumental versions of a lot of different Christmas songs, in particular I like many of Scott Kritzer's versions. Dan Crary also has some really nice ones.
