It is finally getting cold where I live so I want to make some soup.

What are your favorite soups or stews?

Homemade Chicken Noodle Soup OR Chicken Stew. I like chicken based soups.

Clam chowder, beef stew (with carrots, potatoes, celery), chili (with or without meat), chicken noodle soup, pho (Vietnamese soup), shabu-shabu (Japanese hot pot not exactly a soup/stew per se, but cooked in broth and I like to think of it as such), mushroom soup.

So many. My favorite type of food. Chicken noodle. Beef stew. Chili. Lentil soup. Potato soup. Split pea soup. Tortilla soup. Minestrone. Those are all I can think of now, but i'm sure there are more. I just love soups and stews.

Just tonight I made some delicious french onion soup!! Very easy and cheap and so very yummy.

I only really like thick soups like bisque and chowders. The last time I went out to lunch with my friend, they had this great feta and spinach chowder with mushrooms.

I live in the San Francisco bay area and we have a seafood stew called cioppino (say "chuh pee no"), that is tomato-based and has fish, clams, mussels, crab, shrimp, scallops and squid in it. It's served with crusty bread like sourdough or Italian and it absolutely heavenly on a cold day!

Chicken and leek soup with barley! So good on a cold night.

I could also go for a really good beef shortrib and red wine-based stew, with lots of tiny potatoes and carrots and stuff. With herbed buttered egg noodles. OH yeah.

Dršťková, which is basically Czech tripe soup.

just plain tomato soup with meatballs.

Creamy mushroom soup.

Anything with dumpling thingees really.

Butternut squash bisque. Made infinitely more tasty by making your own veggie stock-- I always find the store-bought ones either too salty or too celery-y. A good veggie stock is almost good enough to have just on its own!

My two favourite soups are blended vegetable soup and a chicken soup that was in a recipe book we have.

The vegetable soup is simple, put a pile of vegetables - they can be frozen - in a pot with some chicken or vegetable stock (or a mix of both, just pick your favourite), bring to the boil and cook until the veggies are soft, then start putting it through the blender, using the stock it was cooked in to lubricate. Add as much stock as you wish to get it as runny as you wish. I would also advise reserving any leftover stock for later use.

The chicken soup is diced chicken, sliced leek, diced potato, and creamed corn, in chicken stock. I also tend to add extra corn, and use the green parts of the leek as well, because I'm not worried about colouring.

There's also nutmeat stew, which is basically a pile of vegetables, cooked in water, then gravy powder added, then diced nutmeat added near the end. Nutmeat is a nut-based meat substitute I grew up with. It's Australian, so trade whatever protein you want, though actual meat may need to be cooked at a different stage. Tofu would probably work the same as nutmeat.

I really love soup.

Chicken soup with lots of black pepper and lemon. There is also this Greek lemon chicken soup that I really love.
I also really love Tom Kha Gai and Tom Yum.
Then there is my mother's lentil soup. It's great.
On the more creamy side: Chestnut soup, pumpkin soup, the classic carrot/ginger combination (with optional sweet potato or pumpkin).
I didn't like tomato soup when I was younger but it really depends on how it's made.
I also enjoy certain types of Ramen and Udon - though it really depends on the broth. I'm not a huge fan of light miso and dashi, so a lot of classic varieties of Ramen and Udon are not among my favourites.
