I can see why people do want that - representation, fulfillment of the many emotionally touching scenes between the two characters - but you know if TPTB do those same people will complain that they're doing it wrong. That's the problem with canon relationships: the writers don't always do a good job.

I feel like not having it canon gives us more room for fic.

I feel canon pairings are more likely to fall into a very set timetable that gets repeated in almost every fic. Non-canon pairings can fall into it too, but a bit less than canon.
