There's a few options I might consider:

Despite them being one of my first favourite mythical animals I don't think I'd really want a unicorn because outside the unicorn character in Narnia, they're boring moral compasses that are magnets for hunters who want to slaughter them.

A phoenix might be cool, especially if it came with healing and teleport powers like in Harry Potter.

This one might be a bit obscure but in the second of Terry Brooks' Magic Kingdom of Landover series there was a "crystal cat" that helped the main character. I wouldn't mind a companion like him - note I do say companion, not pet, as the character was totally sapient.

I might consider a fairy dragon or pseudo-dragon, but I would much prefer a full-sized silver dragon as a friend instead. D&D silver dragons can live long-term in elven form. The not-pet point also applies to the silver dragon.
