I'm bi myself and I think the attitude of "well every character COULD conceivably be bi" is dumb as fuck because it is always, without exception, done solely for the purpose of gratuitous buttsex. It doesn't matter if the character in question demonstrates considerable interest in women in canon, suddenly he will want the dick and only the dick and all of that interest in women will just vanish without any sort of explanation as to why.

Just once, I would like to see someone interpret a character as bi and have them actually be bi instead of may-as-well-be-totally-gay.

It's more done for gratuitous "I want to ship this character with someone who's not the gender they're shown being attracted to" or "I want to ship this character with someone who's not the gender of their juggernaut ship partner." I'm bi and I think those are fine reasons to say a character could be bi. At least until there are more canon bi characters.
