You could always try selling your baked goods on the side. I remember someone mentioned they did that, just a small local thing. It would give you a little more experience and a little more income, if that's a motivator for you.

There are some places that will work with special needs children and adults to teach them a trade, maybe you could find something like that? Teaching people how to bake?

I have thought about that! People seem to love my cinnamon rolls, scones, and cookies. I'd just have to figure out the legality and pricing.

I need to look at larger cities for a trade school. The crappy town I am in now doesn't offer any of those services.
