This exactly. I have had rubbery chicken wings, and I do find them quite gross. But I've also had really delicious chicken wings where the skin is...I don't even know what happens to the skin on good chicken wings. It's like it gets thin and basically fuses to the meat so that you barely even notice the difference between the skin and the meat except as a slight textural variation or something.

I think good chicken wings must be cooked in a way that dries them out a little, and then counters that with lots of yummy sauce. Because I have a very low tolerance for greasy meat, and I still find well-cooked chicken wings really delicious.
