I feel like it probably will only be half of the story. Like "time for the Jedi to end" followed by "and something new and better to begin".

New canon has been pushing the Whills, so maybe they just get rid of the Light/Dark dichotomy and have something like the old Grey Jedi instead?

Personally, I would like that. It might take a bit away from the spirit of the old movies, but the very strong line between "this is light and this is dark" never agreed with me anyway.

I agree that's likely but I don't like that any better. I think that the Jedi Order during the prequels had some serious flaws but I don't think the solution is to never have Jedi again. Just address the issues, don't destroy the idea.

True, but in a way, the Jedi in their traditional sense and function don't even really exist anymore, not in the way they did. Luke wasn't exactly trained and educated in the "classic" way we see in the prequels, and he's basically the only one left to really teach any new generations (as far as we know, at least), so anything he can do is already pretty far removed from the "old ways" and this distance will only increase with time. So recreating the Jedi order as it was, even with big changes, seems a bit out of the question in general.

And the prequels showed that the Jedi had strayed from what they were so there's no reason Luke can't just go back to Jedi roots from a thousand years ago. I absolutely want there to be Jedi, and I think it's absolute bullshit if they get rid of them. The core of the Jedi was good, and it shouldn't be thrown out just because that's the new edgy way of movies now.

Well, yes, but it also depends on Luke's knowledge of the Jedi roots, I guess.
I agree that throwing it out for the sake of doing something ~different~ is stupid, but I also think the whole Jedi philosophy of "there is only black and white and nothing in between" is flawed and I'm not sure how the core of the Jedi beliefs can function if you got rid of that hard line.
