As someone who was sorted into Slytherin on pottermore (twice), I've never thought of why the hell Crabbe and Goyle are in there.

Honestly, I assume it's because nothing was more important to them than proximity to Malfoy. They possess Slytherin's negative traits and not really anybody's positive ones.

If anything, you'd think they'd get sorted into Hufflepuff, since loyalty appears to be their most prominent trait.

Were they loyal to Malfoy out of any true sense of loyalty, though? Or because that was the only way for them to really get anywhere in their culture, on Malfoy's coattails?

I think they are ambitious - they want to be powerful and important and strong - and they've quickly latched on to the only way they're going to be able to do it, which is to be henchmen. Some people say they should be Hufflepuffs due to loyalty, but I think in their case the loyalty is in service to their ambitions. If another Slytherin was in Draco's position (wealthy, smart, father on the school board, someone their dads think is important), they'd be loyal to that person instead.
