CAKE

[personal profile] shortysc22 2017-06-21 12:04 am (UTC)(link)
One of my coworkers is leaving for a new job tomorrow and since he and I were friendly, I'm baking this amazing crumb cake to celebrate.

What's your favorite kind of cake to eat? To bake?

Hands down, this crumb cake and this rum cake I make are pretty much my favorite desserts.

I love cake, so I have a bunch of favorite kinds, but my top three are tres leches, chocolate, and vanilla with strawberries. I made a strawberry shortcake once. It didn't look pretty, but it tasted really good.

Tres leches cake is good too! I've never made it but another coworker used to make it all the time.

I don't really have a favorite but I do love lemon flavored things! Probably my favorite to make is cheesecake. Because it is always satisfying when it goes well.

I have two cheesecake recipes I like. One I called red, white, an blue because it's cheesecake with either cherry pie filling or blueberry pie filling on top. The other recipe is for baileys and kahlua brownie cheesecake swirl.

Anything frosted with cream cheese frosting.

Well, any cake made fresh, really.

Pie. I'm not much of a cake person. I guess mousse cake if I have to pick one to eat. Coffee cake is good if it is moist and has a good topping. For baking, also coffee cake.

Coffee cake is probably what I'm calling crumb cake. The topping I make is so terrible for you (SO MUCH BUTTER) but it tastes amazing.

Oh, I've got this lovely recipe for a chocolate cake that has a bunch of mayonnaise in the sponge to make it moist and then coca cola in the icing. It's my favourite! I'm actually making it tomorrow for my birthday party haha :)

Do you mind sharing this recipe? I've put coca cola in the cake, but never the icing.

Re: CAKE

(Anonymous) 2017-06-21 02:23 am (UTC)(link)
Sure! Well, it's in a recipe book but I can tell you how to make the icing haha.

Melt 150g of butter with 50ml Coca Cola and 3 heaped tablespoons of cocoa powder. When it's all melted, pour it into 400g icing sugar and mix until smooth. Then you got ur icing!

In my experience, when the icing cools the oil from the butter can come to the top but you can blot it away with some kitchen towels. Makes a very sweet and yummy icing~

chocolate, lemon, almost any kind of nut, pumpkin, carrot as long as there's no pineapple in it, coconut, orange, spice, banana, honestly, it would take less time to list kinds of cake I don't like.
However, I know some people are going to think this is sappy bullshit but I love even making some kind of cake I don't like because other people are going to like it and I like making them happy.

Re: CAKE

[personal profile] tabaqui 2017-06-21 02:32 am (UTC)(link)
Well, it's the one my mom makes, and i've made it, but i don't really measure....

Depending on cake size, one or two packages cream cheese (the 8oz size)
powdered sugar
butter
semi-sweet baking chocolate
black coffee
evaporated milk or regular milk (or almond milk, whathaveyou)

Soften the cream cheese, then add about two tablespoons butter and about two tablespoons of whatever milk and about the same of coffee. Blend that a bit, then add softened semi-sweet chocolate. Blend that some more (I just use a hand-mixer), then start adding powdered sugar until the icing has the desired consistency and taste. You really won't want to add much liquid *at all*, because a little goes a long way, and if it's too thin, it won't stay on the cake.

Or you end up trying to add more powdered sugar to stiffen it up, and it gets super-sweet instead of being the dark, slightly tangy/cream-cheesy chocolate. The coffee doesn't stand out (I hate coffee, so if it were really strong, I wouldn't like it), it just adds some depth and bitterness to the icing so it's not overpoweringly sweet.

You'll just have to give it a go and see what measurements work best for you/your tastes.

I find that getting the right cake and frosting pairing makes all the difference, this one sounds great.

cake/icing pairings can be really interesting and fun. I recently made pumpkin spice cake with orange walnut icing which came out really well.

My favorite cake is carrot cake.

To my own shame, I have never baked anything ever in my life. (Or cooked anything, for that matter.)

I have this recipe for rum and carrot cupcakes that turned out really well.

I took a cooking class in high school which is where I really learned how to cook and started baking after that.
