What's your favorite kind of cake to eat? To bake?
Hands down, this crumb cake and this rum cake I make are pretty much my favorite desserts.

(Anonymous) 2017-06-21 02:23 am (UTC)(link)Melt 150g of butter with 50ml Coca Cola and 3 heaped tablespoons of cocoa powder. When it's all melted, pour it into 400g icing sugar and mix until smooth. Then you got ur icing!
In my experience, when the icing cools the oil from the butter can come to the top but you can blot it away with some kitchen towels. Makes a very sweet and yummy icing~

However, I know some people are going to think this is sappy bullshit but I love even making some kind of cake I don't like because other people are going to like it and I like making them happy.

Depending on cake size, one or two packages cream cheese (the 8oz size)
powdered sugar
butter
semi-sweet baking chocolate
black coffee
evaporated milk or regular milk (or almond milk, whathaveyou)
Soften the cream cheese, then add about two tablespoons butter and about two tablespoons of whatever milk and about the same of coffee. Blend that a bit, then add softened semi-sweet chocolate. Blend that some more (I just use a hand-mixer), then start adding powdered sugar until the icing has the desired consistency and taste. You really won't want to add much liquid *at all*, because a little goes a long way, and if it's too thin, it won't stay on the cake.
Or you end up trying to add more powdered sugar to stiffen it up, and it gets super-sweet instead of being the dark, slightly tangy/cream-cheesy chocolate. The coffee doesn't stand out (I hate coffee, so if it were really strong, I wouldn't like it), it just adds some depth and bitterness to the icing so it's not overpoweringly sweet.
You'll just have to give it a go and see what measurements work best for you/your tastes.

To my own shame, I have never baked anything ever in my life. (Or cooked anything, for that matter.)

I took a cooking class in high school which is where I really learned how to cook and started baking after that.
