It feels like a lot of the people I see online like three things about Harry Potter, pretty much exclusively:

1) Hermione Granger
2) Harry/Draco
3) Remus/Sirius

and that's it. and there's just no obvious place to fit Weasley into any of those categories. so outside of Ronbledore jokes, there's just not a lot for them to get attached to. It's unfortunate.

harry and hermione are two of the most fleshed out characters in the franchise, while ron is... not

there are large swathes of the books where he's just sort of *there*

I don't think that's accurate? I mean, I think he definitely gets the same amount of screen time as Hermione in terms of having his own plots and storylines. Maybe he doesn't have as much agency in terms of getting shit done, but he's definitely doing things IMO.

Funny, I would say the exact same thing for Hermione instead of Ron. Are you sure you're not thinking of the movies instead?
