I felt that way too the first time I read through them, but the second time I understood a bit better. Hermione IS a know-it-all. Being bookish is both her greatest strength and also her weakness. She's smart, so she thinks she's always right even when she's wrong about things.

But Hermione's brains are actually the thing about her that Harry and Ron respect the most. They tease her about it sometimes, but it's clearly just a joke once they get to know her. They go along with almost all of her OTT study plans and ideas throughout the books, and they never question that Hermione knows the solution to things.
