Baklava. Shit's amazing, but holy fuck is it a pain in the ass to make.

I've never actually made it. I love Baklava, but making it scares me too much.

The actual making is very easy. You're just layering phyllo dough and crushed nuts, spritzing it with rose water, baking, and then drizzling it with a metric fuck ton of honey-lemon syrup.

I'm cheap, so what makes it a pain in the ass is buying a bunch of walnuts and pistachios, still shelled because they cost way less that way, and shelling and crushing the bastards.

You can actually fake baklava really easily though! I used to make it all the time.

Basically what you do is lay down the first dozen layers or so as normal (so, layers of phyllo, some nuts, syrup, more phyllo), but then you do a layer of crumpled up phyllo sheets. Just, like, loosely crumple it up in your hands and lay it down in an even layer. Then go back to layering like usual for the top. (Or, obv, repeat as many times as you want.)

There's no taste difference at all, and the texture difference is negligible.
