Ehhh, not sure this is good advice. Lots of beginners seem to think that super high heat is the way to cook everything just because they heard it's good for steak and stir fry. They end up burning the crap out of everything and then wondering what they did wrong.

in my experience it's the opposite - people are really gunshy about burning stuff and so they don't really use the full heat that they need to get the good flavor out of things

Then it makes more sense to recommend the level of heat that's optimal for a specific dish rather than simply telling people to jack the heat up higher than they think. High heat isn't always appropriate.

I think that inexperienced cooks tend to underestimate the amount of heat required across the board.

Yes! This is why I don't bake: because you have to follow instructions exactly, and I hate following instructions exactly.

You don't have to follow instructions exactly, but you have to know what directions are flexible and which directions aren't.

What anon said. I generally always mix up the order of things or use a hand mixer when it says not to, etc. Or randomly throw in extra ingredients I think will make things taste better.

Mostly - be careful of yeast, it's easy to mess up if you're not paying attention, and use the recommended temp setting. Otherwise - have fun!

This isn't very good advice. You're assuming that everyone will underestimate the amount of heat they need, but not everyone does. Because some of us read the recipe! In some cases, turning the heat up too high will just burn your food and possibly warp your pans.
