Please, OP! I love Pie! bonus points if you make your own crust (my dough is never flaky :/ )

Not OP, but before making pie crust, put your flour and butter in the freezer. I don't have measurements because I don't stick to the same crust recipe every time, but, if you have a food processor, put the cold flour into the processor bowl, cut each stick of frozen butter into 8 slices or so, dump them into the processor with the flour (and salt, sugar, spices, whatever other dry ingredients the recipe calls for, and pulse the butter into the flour until it's broken into little bits, but some bigger chunks are fine. Then dribble in the ice cold water, or vodka, or whatever the recipe uses, pulse a couple more times, and dump onto a clean work surface. Gather the dough into a rough ball, or two, wrap, and shove in the freezer while you rinse the processor bowl.

If you don't have a food processor, it's annoying, but grate frozen butter into the flour by hand with a box or cheese grater, then dribble in cold liquid and mix with a fork, then gather into a ball, wrap, and shove in the freezer. Keep your rolling pin and work surface cold. I find rolling dough put between sheets of parchment paper easier because my hands don't warm it up. When you roll the dough out and put it in a pie plate, put that back in the freezer while you preheat the oven, too. And make sure your oven temperature won't melt the fat out of your crust and leave a greasy mess. Good luck.
