All the BBC nature ones are great (like Planet Earth and The Blue Planet).

Watched Dear Zachary: A Letter to a Son About His Father if you want to have your heart broken.

The Jinx: The Life and Deaths of Robert Durst is insane.

Alone in the Wilderness - about a guy named Dick Proenneke who builds a cabin in the wild by hand with only basic tools. It airs on PBS sometimes.

Oh I LOVE that one, the way he just makes something, be it the cabin or the tools to make the cabin, I just love how precise ita all was, and he made it lol SO EASY, lol!

It depends on what you like, but for nature it's hard to beat the Planet Earth series or anything narrated by David Attenborough. For history, the BBC has lots of great series hosted by Neil Oliver on the histories of Scotland, Ancient Britain, Celtic Britain, Sacred Wonders of Britain, and the Vikings series was pretty great, too. Then of course, Ken Burns' Civil War series is a classic. I hear his more recent Vietnam series is also good but haven't seen it yet.

For random topics, one of my all time favorites is "Sandwiches That You Will Like", all about regional sandwich specialties in the U.S. Don't watch it on an empty stomach. :)

The "Bright Lights: Starring Carrie Fisher and Debbie Reynolds" doc has been on my watch list.

For crime, "The Keepers" on Netflix is heartbreaking and unresolved. "Making a Murderer" is fascinating, but controversial. "Grizzly Man" is also on Netflix, I think. It's not really a nature documentary, it's sort of a WTF documentary about one extremely misguided guy who ended up being killedand eaten by grizzly bears.

I liked "The Imposter." Just such a weird story. The big idea presented at the very end was a little bit of a disappointment to me but the whole movie didn't hinge on that and it's really interesting and creepy to hear how an adult managed to pass himself off as a high school student. It's on Netflix.

I would recommend Allthemed Docs on Youtube if you like British history documentaries.
