Oysters. Taste like the ocean farted in my mouth. So gross. But I love clams, scallops, and mussels, so go figure.

As someone who’s never tried shellfish, can you tell me what the difference in flavor is between them? Every person I’ve heard talk about oysters, clams, etc has always just vaguely said “taste like the sea.”

That's because it's really the closest thing to compare it to. Raw oysters taste like... well, imagine a mouthful of salt water, but without the strong "salty" component, if you can. Or picture standing at the edge of the ocean on a (clean!) beach and breathing in deeply through your mouth. That's kind of what it tastes like.

Raw oysters are SUPPOSED to taste like the sea, but imo they have a very strong, unpleasant fishy taste. Even fried oysters taste bad to me. Then there's the texture issue: they're like big, slimy, fishy boogers. Scallops, however, actually taste the way the above anon describes, like a breath of fresh air on a clean beach, with a hint of sweetness. They are mild and have a soft texture as well, not rubbery or slimy. Mussels can be tricky. They can have a strong fishy flavor too, depending on their age or where they come from, and I don't always want them, but good mussels are stronger in taste than scallops, mildly fishy and have a slight chewy texture. A bowl of good mussels in a white wine and garlic broth with crostini is the best!
