Probably because the illusion of the big happy family and perfect holiday is harder to maintain without you there. They're there, toeing the line and pretending everything is amazing, and they see it as a betrayal that you're not doing the same. It's bullshit, really. If they wanted a big loving family gathering, they'd serve food that doesn't make you sick or at the very least, stop insisting that you eat food that will make you sick, just for the sake of appearances. It's not THAT hard, they just don't want to do it because they're being assholes.
