They might not have known that they were siblings for the vast majority of it, but they did spend four-five years together after both of their lives were irrevocably and traumatically changed, under conditions that would have promoted close and quickly-formed bonds.

Agreed. Also, they met in the aftermath of both of them suffering great losses - Leia lost Alderaan, and Luke lost his aunt and uncle. It kind of makes sense that even if they didn't spend so many years together, I think they would very much want to be each others' family.

Bonds that may not last because they were born from trauma both may have not been ready to deal with and would complicate bonds. Let's be real: the biggest things they have in common are those experiences and some blood ties. Do they have similar hobbies? Likes, dislikes? Etc?

Luke should've formed the same bonds with Han Solo, then.

Agreed. I'm not hugely familiar with the SW EU, but I did think that Han/Luke/Leia definitely had a family-like bond by the end of ROTJ.

I'm not saying he didn't. Just that Luke and Leia aren't starting from scratch when it comes to building a sibling/familial relationship - they're already close friends if not familial already.
