My immediate thought was The Ancient Magus Bride, despite the name romance is not really a focus (especially considering the magus in the title is a monster with a cow skull as a head). It's a very good fantasy series, the music and animation are lovely. The only warning point is it's based on an ongoing manga and it's unknown how the anime will tie off the series, but I find the plot so far easy enough to follow.

Shin Sekai Yori/From the New World might also be to your liking, it's based off an award-winning Japanese novel and the story is very strong. It has some violent moments but I wouldn't consider it to be over-the-top gore and nothing is gratuitous, even the violence is in support of the story.

For something slower, Haibane Renmei is haunting and fascinating. It starts out a bit slow and more slice of life but gets better as it goes. The story isn't the most straightforward but it's not what I would call confusing so much as thought provoking.
