I think a good part the "Harry Potter is too fluffy" backlash comes from the fact that the fandom tended to be very much the opposite, and still is. Whether it's dark novel-length fits, NC-17 kink... there's a huge dissonance between everyone in a fic except the trio dying, or Harry and Draco doing BDSM, and what the books present. I don't think that's all of it, I think every fan has their own reasons for feeling however they do, but it doesn't help that since GoF was released, fandom's really made Harry Potter way more mature and adult than it was ever going to be in canon.

While that is a fair point, HP DID get more dark after GoF, canonically. I do think some people went overboard with it in fanon but keep in mind that HP is a YA series. Had it been an adult series, it definitely would've been as dark canonically as a lot of people made it to be in fanon. That's just my opinion.
