I wish I had had a few examples prepared! Visuals of meat can be amazing, too. Especially in medieval settings. I don't know why, modern recipes are probably much better, but there's something about the aesthetic.

Feast depictions and the like, which tend to be the things explicity mentioning meat, tend to have a really strong sensory vibe. And in depth depictions of specific meals tend to be sentiment-loaded in reference to the characters, like something nourishing during a journey, or something from their home. So that heartiness -> emotive -> sensual thing kinda goes hand in hand for me.

Probably Thanksgiving/some other holiday, or religious reasons. Or eating it among family/peers as to not seem rude. Or maybe not it's an "obligation" so much as it's not worth the energy to resist in some situations? I'm not sure what OP's exact reasons are, but I can kind of relate. Maintaining a strict diet can be, or at least seem extremely difficult at times, especially if you've got depression/anxiety/etc.

Why is that hard to imagine? A situation where refusing food would be too awkward and rude to bother with. For an extreme (but real) example, hospitality on a service trip in a foreign country. Your host works hard putting together a nice meal, with no concept of vegetarianism, and features a meat dish made especially for you. Maybe doesn't even speak English. Rejecting that just feels like a horrible thing to do, unless you literally have an allergy and will die.

I ate meat once on long, 14-hour plane ride coming out of Asia. I had booked my tickets through a third-party website and while I had requested a vegetarian meal online, the (Asian) airline hadn't gotten the message. So when I was served chicken, I had two options. Eat it, or starve and let the food go to waste, since no one else was going to eat it and uneaten food was going straight in the trash bin. I chose to eat it and not let the animal die in vain. Got sick, threw up, but also think I made the right choice.

I’ve been a vegetarian for decades and fictional descriptions of meat never make me hungry or anything, but I like to cook and am always sad when an interesting recipe includes meat in a way that it’s not possible to substitute something else for.

I eat meat, but I wouldn't consider a lack of meat during a food shortage to be a problem so much as it's the lack of EVERYTHING during a food shortage that's the real issue. I could go as long as I needed to - the rest of my life even - without eating meat if there was none available, as long as there was other food available.

OP, I've just started a vegetarian diet about a month ago and that picture is NOT helping! Guh, I want chicken so badly right now, but...

No, it's OK. It's not that serious. Most food does sound a lot more delicious in literature than it tastes IRL, though, doesn't it? I've noticed that. Sometimes I will read Coffee Shop AU's and stories just to imagine the scent of fresh coffee and cinnamon rolls. That always gets me going.

Chicken is probably the easiest meat to veganize. Morningstar farms chicken strips are good if you want something quick and easy, Boca makes good spicy chicken patties and chicken nuggets, Gardien has excellent chicken strips, and you can make chicken flavored seitan for use in things like fried chicken.

Agreed! Chicken is the only meat I miss since becoming vegetarian, but the "fake" options are awesome. I love Morningstar's buffalo chicken patties and chicken strips, a few other brands have really great chicken nuggets, too. I forget I'm vegetarian sometimes because I'm always eating "chicken" stuff. haha

Well, it's only expected that eating it would make you sick now...maybe the fictional fantasy of meat just doesn't come up with stomach-turning associations the way that contemplating eating it yourself might.
