Nah, for the most part what someone likes isn't really telling of anything much(it might reveal a pattern, in like favourite genre, ship-type, character-archetype, etc).

I'll only start side-eyeing if someone like that hates on every female character in existence or acts like f/f is disgusting while m/m is the Holy Grail.

Otherwise people can like what the hell they want.

Agree. I only get judgey if all of the below criteria are met.

a) the person exclusively ships white male/white male pairings across several fandoms and doesn't seem interested in even a single het, femmslash or pairing w/ POCS

(b) the person has a long history of talking sh*t about female and/or POC characters, especially those who "get in the way" of their ship

AND

(c) the person repeatedly and vehemently attacks other ships, their shippers, and/or the show's actors/creators/writers.

I'm fine with people not having any interest in m/f or f/f ships since you can't force yourself to like something you're just not into(and honestly I'd rather people be into f/f out of genuine interest than weird guilt or whatever), but I can agree that most of your list makes little warning bells star sounding in my head.

A lot of it really depends just how hateful the person is. Dislike is fine, extreme frothing hatred is back-away and block territory.

bonus: they claim that there's some kind of 'conspiracy' in the show/book/movie keeping their fanon m/m ship apart.

Well there's no conspiracy, but by and large M/M and F/F ships are vetoed (or not even considered at al) by writers and producers purely because of homophobia. So a certain level of persecution complex is in most cases totally understandable.
