The Harper Hall trilogy by Anne McCaffrey. The Wizard of Earthsea and the first couple sequels by Ursula Leguin. The Dark is Rising series by Susan Cooper. Winter of Magic’s Return and Tomorrow’s Magic by Pamela F. Service. Dealing With Dragons and the sequels by Patricia C. Wrede. The Song of the Lioness and Wild Magic books by Tamora Pierce (the rest of the Tortall books didn’t come out until I was an adult.) I was really into dragons and Arthurian legends (well, specifically Merlin) as a kid.

Did McCaffrey write a series about talking white horses that were like...soulmates of people? Or bonded companions?

Or a book about gryphons? I read the first part in two trilogies that i think might have been by her.

The talking white horses were called Companiobs, bonded to magic users, but it was Mercedes Lackey, not McCaffrey.
