Pasta salad!

What's in your pasta salad? I'm not crazy about the mayonnaise based kinds, so I usually just use a good bottled Italian dressing instead. It's super easy.

Yeah, I definitely go with vinegar-based sauces - I don't typically use bottled dressings but it's basically going to be the same idea.

And what's nice about pasta salad is that you can kind of throw together anything you want. I'll usually have some cherry tomato, some olive, maybe some shallot or red onion, some roasted red pepper, some roasted broccoli, some cubed mozzarella, maybe some capers. But there's like an infinite number of different places you could take it.

Ditto, except I do kind of a pesto or pistou rather than mayo dressing. I put kalamata olives, a couple different colors of sliced bell pepper, diced celery and red onion, cherry tomatoes, and if there’s gonna be more vegetarians there than just me, tamari fried tempeh for protein. That way it’s even vegan. I’m not, but I figure it must suck to be vegan at most potlucks.

What is a pistou?

Basil and olive oil and garlic and maybe pine nuts, but no cheese.

Yeah, I usually go more vinegar-y because that's my preference, but I would definitely do pesto over mayo any day.

Nice! Except for the red onion, that's pretty much what I do. I add small-cut broccoli florets, shredded carrot and pimento.

I have an amazing pasta salad with dried tomatoes, salted almonds, olives, rucola and capers.

Also one with rucola, chickpeas lemon juice and red onions.

So much better than the mayonnaise versions.

I usually do this with leftover turkey, a very light amount of mayo, tri color rotini, mushrooms, peas, garlic powder, and a little basil and oregano.
